Salaryman is cranking up the charcoal this spring. A new menu moves away from ramen to focus more on a modern Asian BBQ where charcoal-grilling and share dishes are centre stage, backed up by beats and a bar open ‘til late.

The Surry Hills space still has that cool grungy basement look with dimmed lighting that evokes the perfect date night vibe. The long, open kitchen buzzes as the team of chefs grill, smoke and fry their way through the new menu – their interpretation of a broader range of Asian cuisines than before.

Chef Stephen Seckold says dropping ramen wasn’t an easy decision. “You can’t share a ramen – well at least I don’t think you should!” says Seckold.

“Our customers wanted to share their food and so cranking up the robata and move to a completely shareable menu was the way to go. This new menu works well with the bar too as more and more people drop in for a cocktail or wine and a snack after work. Moving into the warmer months seemed like the right time to make the change.”

Balancing the charcoal is a collection of delicate raw seafood and damn good fried buns and rolls. The ocean trout tartare with fried sushi rice and brown butter ponzu is light and pairs well with the biodynamic 2016 5452 by KT Watervale riesling. The fried Chinese bread with black garlic dip and xo bone marrow is as good as it sounds and if you’re going all out, you may as well get the loaded fries with tonkatsu sauce, spicy mayo, bacon, nori and bonito flake too.

A new set menu designed for feasting with friends is also on offer with seven or 10 shared savoury courses.

The Salaryman cocktail and wine bar has evolved into more of a destination with smaller plates – schichimi pepper and dashi butter popcorn and pan fried pork pot sticker dumplings with black vinegar, for example – the perfect pair to a cocktail or glass of natural vino.
