Australia’s best chefs assemble their favourite recipes for Dish, a one-of-a-kind, limited edition cookbook supporting the Starlight Children’s Foundation. On sale 24 July, Dish features 90 indulgent recipes by 45 chefs and restaurants around the country.

This is a cookbook with class. The innovative design features an embossed cover and around 350 pages of never-before-shared as well as more familiar recipes. There’s Sydney favourites including Hubert, Porteno, Dead Ringer and Saint Peter; Melbourne’s plant based Smith & Daughters; Canberra’s acclaimed Aubergine; and Adelaide’s Africola, among many others. Alongside their recipes, chefs get personal and share their favourite childhood memories around food, all beautifully handwritten next to the recipes.

Josh Niland of Saint Peter was one of the first chefs to get involved in the project, contributing two recipes: fish and chips; and almond meringue with white peach caramel. Niland has a special connection with the Starlight Children’s Foundation when he was diagnosed with Wilms tumour, a rare kidney cancer, as a child.

“As an eight-year-old in hospital I was granted a wish that turned a terrible chapter of my life into one of my most memorable experiences. Starlight flew my family and I to the USA to watch the Chicago Bulls play – every kids dream!  The trip gave us a chance to laugh and take a break from a stressful time in our lives,” says Niland. “For this I am forever in debt to Starlight and any way I can give back, I will. Dish is a great way of sharing my love of food and the foundation with fellow foodies.”

The recipes range from brunch through to dessert, for novice cooks through to amateur chefs. Fire-obsessed Lennox Hastie of Firedoor shares his recipe for grilled marron with finger lime and native herbs. Stanbuli head chef Ibrahim Kasif satisfies sweet tooth cravings with his recipe for rosewater milk pudding with watermelon granita.

All proceeds from sales of Dish will be donated to Starlight Children’s Foundation which brightens the lives of seriously ill children and their families in Australia through hospital programs and experiences.

Dish is curated and designed by Kelly Shield an ex-chef turned graphic designer and avid cookbook collector. Born from a love of food, giving back through hospitality and rebelling from the standard cookie cutter cookbook design, Dish was formed in partnership with Digital Press. The design is unlike any standard cookbook out there.

Dish is available online and in selected restaurants featured in the book for $75 RRP. The limited print run means each edition is numbered, with all proceeds to go directly to the Starlight Children’s Foundation. There are an even smaller number of books autographed by a collective of the chefs for $100 RRP.
