The team from Mad Mex Fresh Mexican Grill, is bringing a new dining concept to Australia, Cantina de Mad Mex; a lively, casual bar and eatery experience with a dedicated bar and an extended Mad Mex menu.

Cantina (noun), meaning bar in Spanish, will offer daily freshly made cócteles (cocktails) including the Fresh Coconut Mojito, the ‘Margo’ House Margarita and the ‘El Santo’ Margarita with Don Julio tequila, fresh lime and orange juice with a chilli and lime salted rim – it’s hot stuff! You’d be mad not to try it.

Boasting crisp washed wood walls, terrazzo floors, a beach shack vibe with shades of sea foam blue, Cantina de Mad Mex is the epitome of relaxed Californian seaside with a touch of Mexican spice.

The first-ever Cantina de Mad Mex has opened at Westfield Kotara’s new rooftop dining precinct with seating for 80 people (160sqm (130 inside, 30 outside), and encourages diners to stay and enjoy their experience, rather than order and go.

“Cantina de Mad Mex is a game changer for the business, designed for the future to cater for the growing trend towards a quality, casual dining experience with all the edge and fun expected from Mad Mex,” said CEO, Clovis Young.

“By the end of 2016, Mad Mex plans to open 20 Cantina de Mad Mex in Australia and venture out into the international market including the Middle East and Asia,” Young continued.

Whereas Mad Mex offers the freshness, colour and flavour the brand is known for in a fast service, and quality food, in a fringe food court setting, Cantina de Mad Mex will be a dining and drinking experience with a typically larger footprint, a dedicated bar all in a relaxed atmosphere. Cantina will always be located within existing or new dining precincts rather than food courts.

The Mad Mex mission is to create the best burritos in the world based on a food philosophy anchored in premium quality ingredients sourced both locally and directly from Mexico while using traditional and Baja recipes and cooking techniques to deliver the Mad Mex twist.

The recent launch of both Mad Mex Pacific Fair and Sydney Domestic Airport plus the first ever Cantina de Mad Mex means there are currently 60 stores in Australia with an additional 15 set to open in 2016.
