Ben Williamson of Gerard’s Bistro in Brisbane, is taking over the kitchen at Balmain’s Efendy on Wednesday 11 October.
For one night, Williamson cooks a four-course feast showcasing his unique take on Middle Eastern food. Dishes include roasted flathead with tahini and watercress sauce, charred leeks and pickled kohlrabi; and slow roasted wagyu brisket served with flatbread and jewelled rice. Finish the meal off with a dessert of perfumed orange granita, citrus curd and caramelised white chocolate.
This is the third in a series of guest chef dinners at Efendy to celebrate the restaurant’s 10th anniversary.
